TROPICAL SMOOTHIE BOWL

Ingredient for the smoothie:

  • 1 - banana, cut into large chunks, frozen
  • 1/2 cup - frozen pineapple chunks
  • 1 cup - plain Greek yoghurt
  • 1 cup - coconut milk
  • 1/4 cup - Acacia or honeydew honey

Toppings:

  • 1/2 cup - fresh pineapple, diced
  • 1 - mango, sliced
  • 1/4 cup - toasted coconut
  • 2 T - macadamia nuts, toasted and chopped
  • 2 tsp. - chia seeds

DIRECTIONS

Blend the frozen fruit, yoghurt, coconut milk and honey until smooth and divide between two bowls.
Top each bowl with the fresh fruit, toasted coconut, macadamia nuts and chia seeds, eat immediately

TIP

You can add a scoop of protein powder to the blender to keep the hunger cravings at bay even longer.

FRUIT FOOD WITH HONEY-SPIKED CREAM CHEESE

Ingredients for Honey-Spiked Cream Cheese:

  • 1 cup - whipped cream cheese
  • 4 T - lavender honey (blueberry or wildflower honey can be used)
  •  3 T - chopped pistachios

For Fruit:

  •  2 cups - whole strawberries
  •  1 cup - cherries
  •  1 - mango, sliced
  •  1 - Granny Smith apple, sliced
  •  1 - dragon fruit, sliced (optional)
  •  1/2 - pineapple, cut into wedges
  •  whole-grain pretzel twists
  • mini rice cakes

DIRECTIONS

In a small bowl, combine cream cheese and honey and whisk well. Transfer to a serving bowl and top with chopped pistachios and an extra drizzle of honey.

TIP

Feel free to substitute other fresh, seasonal fruits that are easy to dip. 

HONEY CHIA SEED PUDDING

Ingredients: 

  • 2 T - Acacia or honeydew
  • 2 cups - coconut milk
  • 6 T - chia seeds
  • 1/2 tsp. - vanilla extract
  • Fresh berries

DIRECTIONS

Combine the coconut milk, chia seeds, vanilla and honey in a medium bowl. Mix well until the honey has dissolved. Cover and refrigerate for at least 4 hours, but preferable overnight.
Stir well and divide the pudding into individual portions.
Serve with fresh berries. Add granola, if desired.
