Firstly, what is Acacia honey?

Acacia honey is also known as locust honey. It has a delicate flavour, a mild taste and a light colour, almost transparent but occasionally with a tint of lemon yellow or yellow-green. Acacia honey is popular all over the world, particularly with Americans and Europeans. Acacia raw honey is sometimes called “liquid gold” or ‘liquid glass’.

Conveniently, Acacia honey remains liquid longer than the other 300 types of honey, and crystallises much slower due to its higher fructose content. Fructose-rich honeys such as acacia honey have a Glycemic Index of 53, other varieties of honey range from 32 to 85, depending on the botanical source.

So, what is Acacia honey good for?

Where does Acacia honey come from?

Fact: Acacia honey does not come from Acacia trees! It actually comes from the source of blossoms from black locust tree, Robinia pseudoAcacia, sometimes called ‘false Acacia tree’.

Black locust trees not only produce amazing honey (with the help of the bees of course!), but as members of the pea or Fabaceae family, they pass nitrogen into soil, which is a great benefit for damaged or poor soil areas.

Black locust or false Acacia trees grow rapidly and can attain heights of up to 21m when mature. The trees thrive in moist, fertile soil and are often grown as firewood because they grow rapidly and burn hot.

Hungarian Acacia honey is totally pure and clear as the Pannonian Basin has a unique climate and Acacia forests that expand large areas, and within which nothing else is blooming at the same time.
