Cowboy Caviar with Hot Honey Dressing

Our Hot Honey Dressing adds an irresistible kick, balancing the zesty freshness of lime, the earthy richness of black beans, and the satisfying crunch of peppers and sweetcorn. It's so quick and easy!

 

 

What you need for the Cowboy Caviar...

  • One can of 195g sweetcorn drained 
  • One 200g packet of feta cheese
  • A can of 400g black beans drained and washed
  • 225g olives (chopped small)
  • 340g tomatoes (chopped small)
  • 1-2 avocados (chopped small)
  • 1 red pepper (chopped small)
  • Half a red onion (chopped small)
  • 1 cup of coriander (chopped small) 

 

What you need for the Hot Honey Dressing...

  • Two tablespoons of hot honey
  • 1/3 cup of fresh lime juice
  • 1 teaspoon of cumin
  • Salt & pepper to tase
  • 1/3 cup of olive oil

 

Instructions...

  1. Chop the red onion, olives, avocados, coriander, tomato's and red pepper, the smaller the better! 
  2. Combine all the chopped ingredients with the sweetcorn, black beans and crumble in the feta cheese. 
  3. Mix all together.
  4. Combine all the dressing ingredients in a empty jar with a lid or bottle with a lid so you can shake well. 
  5. Drizzle the dressing over the Cowboy Caviar and enjoy!
  6. Serve with tortilla chips for a extra crunch.
