What you need...

  • 1 ½ cups all-purpose flour (or whole wheat flour for a healthier option) 
  • 2 tbsp coconut sugar 
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt 
  • 1 ¼ cups milk (dairy or plant-based like almond or oat)
  • 1 large egg
  • 3 tbsp melted butter or coconut oil (plus more for greasing the pan)
  • 1 tsp vanilla extract

For the Topping:

  • 3 tbsp Organic Honey with Raw Cacao 
  • Fresh fruits (optional: bananas, strawberries, or blueberries)
  • Chopped nuts or seeds ( almonds or chia seeds go beautifully)

 

 

Instructions...

  1. Mix the dry ingredients:
    In a large bowl, whisk together the flour, coconut sugar, baking powder, baking soda, and salt.
  2. Prepare the wet ingredients:
    In a separate bowl, whisk the milk, egg, melted butter (or coconut oil), and vanilla extract until well combined.
  3. Combine wet and dry:
    Gradually pour the wet ingredients into the dry ingredients, mixing gently with a spatula. Be careful not to overmix some lumps are okay! Let the batter rest for 5-10 minutes to allow the baking powder to activate and give you extra fluffy pancakes.
  4. Cook the pancakes:
    Heat a non-stick pan or griddle over medium heat and lightly grease it with butter or oil. Pour ¼ cup of batter onto the pan and cook until you see bubbles forming on the surface (about 2-3 minutes). Flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
  5. Assemble and serve:
    Stack the pancakes high, drizzle generously with Organic Honey with Raw Cacao.
