- 1 ½ cups all-purpose flour (or whole wheat flour for a healthier option)
- 2 tbsp coconut sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 ¼ cups milk (dairy or plant-based like almond or oat)
- 1 large egg
- 3 tbsp melted butter or coconut oil (plus more for greasing the pan)
- 1 tsp vanilla extract
For the Topping:

Mix the dry ingredients:
In a large bowl, whisk together the flour, coconut sugar, baking powder, baking soda, and salt.
